Chef Timo and I are a little alike, in that we hate turning up for breakfast and they tell you it's finished and lunch doesn't start for an hour and a half - WTF!! We have the same hatred of lunch/dinner timing issues. Only answer seems to be avoid such establishments that force you to eat according to their timetable. I mean you're on holidays and should not be forced to keep the same hours as you do when working - or am I missing something here?
Luckily, they didn't try that caper here - there was a seamless segue into lunch/brunch which involved fresh sea bass.
